The Sky’s Aflame
If you’re after something light and vibrant but with a good dose of spice,
this grapefruit-lime-tequila number might do the trick, with the spicy,
smoky chili liqueur Ancho Reyes taking center stage.

MAKES 1 DRINK

1½ ounces blanco tequila 1 ounce Ancho Reyes *
½ ounce ruby red grapefruit juice ½ ounce lime juice
¼ ounce light agave syrup (page 199) 1 dash Angostura bitters 1 dash

grapefruit bitters Half-moon slice grapefruit, for garnish

* Liking the Ancho Reyes? Try Frosty’s Revenge (page 121).

Combine all ingredients in a cocktail shaker with ice. Shake vigorously, then
strain into a rocks glass over fresh ice. Garnish with a half-moon slice of
grapefruit.

Keep ’em Coming
Just a dash of celery bitters and a big celery stick might have you thinking
this bitter drink has celery juice in it, but there’s no juicing necessary. With
bitter, herbaceous Cynar, slightly grassy reposado tequila, and sweet
vermouth to balance it out, it’s a bone-dry, vegetal refresher for when you
want a light drink that’s not sweet in the slightest.

MAKES 1 DRINK

2 ounces reposado tequila ¾ ounce Cynar
¾ ounce sweet vermouth 1 dash celery bitters *
2 ounces club soda
Celery stalk, for garnish

* Refreshing but bitter? Try Mezcal Amargo (page 117), Alpine
Ascent (page 187), Il Pompelmo (page 183), and Lucky in
Kentucky (page 135).

Combine all ingredients except the club soda in a mixing glass with ice. Stir
until well chilled, then strain into a tall glass over fresh ice. Top with 2 ounces of
club soda and stir briefly. Garnish with a celery stalk.
